How to use this chart
Weights are per US cup of 236.6 ml, with tablespoons and teaspoons worked out from it. Flour, cocoa and other powders assume the ingredient was spooned into the cup and levelled, not scooped. Brown sugar is packed. To convert a whole recipe at once, paste it into the recipe converter, which uses these numbers and adjusts for UK, Canadian and Australian measures.
Our sources
- King Arthur Baking ingredient weight chart: the main figure wherever it lists the ingredient.
- America's Test Kitchen baking conversion chart: a second figure for flours, sugars, cocoa and butter.
- USDA SR Legacy data, read through ReciPal pages that cite the USDA record number.
- Milk Street for salt by brand.
Some sources give a tablespoon or quarter cup rather than a cup; those figures were multiplied up to a cup, and that's noted in our data. A few ingredients (UK double cream, black treacle, sultanas, demerara) are listed under the closest sourced ingredient rather than measured separately. Golden syrup is left out because we couldn't find an authoritative weight.
Frequently asked questions
Why do different charts give different weights for a cup of flour?
Because they measure differently. Spooning flour into a cup and levelling it gives a lighter cup than scooping it from the bag. King Arthur Baking uses 120 g for all-purpose flour; America's Test Kitchen uses 142 g. Both are reasonable for the method each one describes, which is why this chart lists both.
Which value does the recipe converter use?
The first value listed for each ingredient, which is King Arthur Baking's figure wherever King Arthur lists that ingredient. Water uses its physical weight of 1 g per millilitre.
Are these weights for US cups?
Yes, the chart is per US cup (236.6 ml). The recipe converter adjusts automatically for the 250 ml metric cup and the 20 ml Australian tablespoon.
Why is kosher salt so different between brands?
The crystals are different shapes. Diamond Crystal's hollow flakes take up more room than Morton's denser crystals, so a teaspoon of Diamond Crystal weighs about half as much. If a recipe says 'kosher salt' without a brand, weigh it if you can.
