Sources: gas mark, °F and °C from Wikipedia's gas mark table; fan temperatures from Which?.
The formula
°C = (°F − 32) × 5 ÷ 9, and °F = °C × 9 ÷ 5 + 32. Recipes round the result to the nearest 5 or 10 degrees, which is why 350°F appears as 180°C rather than 177°C.
Fan, convection and conventional ovens
A fan moves hot air around the food, so it cooks faster at the same setting. British and Australian recipes often give both a conventional and a fan temperature; American recipes usually assume a conventional oven. Reduce the temperature only if the recipe was written for a conventional oven and yours uses the fan.
Frequently asked questions
What is 350°F in Celsius?
350°F is about 177°C, which recipes usually round to 180°C. In a fan oven that's about 160°C, and on a gas oven it's gas mark 4.
How much lower should a fan oven be?
Fan ovens are usually set about 20°C lower than a conventional oven (Which?). For US convection ovens, King Arthur Baking suggests 25°F lower and checking about 10 minutes early. If a recipe already gives a fan temperature, don't reduce it again.
What is gas mark 4?
Gas mark 4 is 180°C or 350°F, the most common setting for cakes and cookies.
Why do sources disagree on gas mark 3?
Gas marks were never defined to the exact degree. Wikipedia's table gives 170°C for gas mark 3, while Which? gives 160°C. Ovens also vary, so an oven thermometer is the most reliable fix.
